Potato Chip Chicken

Sometimes you should just think of something else to make for dinner. This is one of those times.

I wanted to make baked "fried" chicken but as I was getting all my ingredients ready I realized I was out of one crucial ingredient...breadcrumbs. I searched high in low in my cabinets for crackers, cornflakes, bread, (as you might be able to tell I hadn't been to the grocery store in a while) and finally came across something that I thought would work. Potato chips. Yes, I thought, that would add the perfect crunch and flavor that I would be looking for. Brilliance! I proceeded to prepare the chicken.. I crushed up the potato chips, combined it with italian seasoning, garlic salt, and a bit of olive oil. I salted and peppered the chicken, dipped it into an egg wash, and then dipped it into the crumb mixture..(anyone catch my mistake yet? :D ) I put it in the oven and cooked it till it turned a lovely golden brown. Boy did it look good! I couldn't wait to eat. I plated it with some rice and applesauce and took it in to living room for my bf and I to enjoy. I waited expectantly for his praise of my genius. He took his first bite...his lips curled in. His face turned red. He started gulping his drink and running to the kitchen for more. He had his head under the faucet as I rounded the corner.. Still flushed he asked what in the world did I do to that chicken. I started to list the ingredients.. Chicken, olive oil, egg, pepper, italian seasoning, salt, garlic salt, potato chips...oooohh! I guess Salt, salt and more salt is not a good thing. Needless to say he will never try potato chip chicken again :D

I used to think I could never get enough salt, especially fried salt. Food was just a vehicle for salt and butter (especially for salted butter, and especially for anything fried in butter and salt).

Then, my father and in-laws had heart-attacks and I had to adjust my taste, as did the rest of the world.

Funny, I was thinking about this yesterday in rather chi-chi Mexican/Tex/Creole restaurant (Borders in Harvard Square, for the Boston folks reading this), recoiling a bit from the over-salted tortilla chips that were placed on the table, and then thinking that I could enjoy them more when I got my plate of crayfish etouffe. WRONG.

After a bite, I had to send it back. I told them just to make it up in margaritas, extra ice, NO SALT.

I fondly remember the tuna-noodle-potato chip casseroles that my mother made, but whenever I even look at the recipe card that she gave me when I married, I have to drink a carafe of water.

i have actually eaten potato chip chicken before, and it was great! just leave out the extra salt next time. good thinking in a pinch - don't be discouraged.

But Alison did leave out a chicken breast for me to bake with the usual no salt seasonings. I did have some of the salad she prepared that had a bit of blue cheese, strawberries and light raspberry dressing.

I remember a recipe with crushed rice crispies and potato chips. I don't think you added either any more salt or any more oil, since there's plenty of grease on the chips.
Is your boyfriend a slug? I'm amazed at his reaction to the salt! Unless you used a ton, it shouldn't have been such a big deal.

Ooogh. *wince* Aside from the extra salt, it sounds like it could have potential for another try. Maybe use a few less potato chips and cut it with plain breadcrumbs to tone down what salt might already be there... hm. Sorry it didn't work out, though, yikes.

hey this is kind similar to something i am thinking of trying. i want to make tuna casserole with potato chips, but i dont like tuna so i wasgonna substatute chicken and cream of chicken soaup instead of tuna and cream of muchrom. can i just do the straight cross over or do you think i'll need to change other things?

Hi Scarblade, I think what you are proposing actually sounds really good. You could add vegetables or real mushrooms to the mix. for the crust I think just the crushed potato chips added probably in the last few minutes before you serve (could broil it to get it a little brown just keep your eye on it)

Next time just use salt and vinegar chips! just do your egg wash (or if you are feeling advantageous... do a little bit of butter and lemon juice) and then roll it in your crushed salt and vinegar chips with a bbq sauce (to counter the tartness)!! im sure you will love it!
